• 牛小排部位在牛胸前肋脊部的第6節至第8節，牛小排部位油花豐富且均勻肉質柔軟，非常適合火鍋和烤肉。
• 手切細心修去多餘的邊油，切面略帶自然的粗糙感，能更好地吸附湯汁或醬料。不是一般機切可以媲美。

• The Angus cattle are grain-fed for over 200 days, with no added hormones and are halal certified. The meat has a rich flavor and a light fat content.
• Short ribs are cut from the 6th to 8th ribs on the front of the cow's chest. They are rich in marbling and have a tender texture, making them perfect for hot pot and barbecue.
• Hand-cutting carefully removes excess fat from the silver skin, leaving a slightly rough, natural texture on the cut surface, which allows it to better absorb broth or sauce. This is something that machine-cutting simply cannot match.
